  • Assisted the Coordinators & Manager by reviewing the entire HACCP documentations of the process and practices to ensure compliance and deviation are documented and reported and file the documents for traceability purposes and to ensure due diligence.
  • Conducting internal training to the staffs such as basic food allergen training, foreign body risk awareness training and operational procedures, Critical Control Point procedures and food safety talks.
  • Inspect and evaluate workplace environments, equipment, and practices, to ensure compliance with EKFC safety standards and government regulations.
  • Ensuring the safety of raw and cooked food (RTH & RTE items) by checking and verification upon receipt. All items are received as per EKFC specifications and communicating with the suppliers (through NCR’s if required) for any deviation while receiving the raw materials.
  • Conduct sensory evaluation of raw material or RTH items (as applicable) prior to use and dispatch and to ensure that all the products are assembled as per standards along with NPD Chef’s.
  • Verification of food temperature during cooking, blast chilling, assembling and packing till the item is dispatched to the clients to ensure the food safety.
  • Conducting daily GMP, GHP, Monthly GMP, Weekly traceability, Holding fridge audit, foreign body risk assessment audits and internal audits. The findings are discussed with the Team leaders and Supervisors and reported to the Management.
  • Reports any non-conformances on the HACCP process either abuse or negligence on the policy and standard. Directly reporting to the Coordinators, Specialists and Managers.
  • Perform ERP traceability (if required) during raw materials, finished goods, customer complaints and mock recalls and to perform investigations.
  • Overall verification of Hazard Analysis Critical Control Point (HACCP) System, Work Instructions and Procedures.
