• Job Description:
• Able to effectively control the Food & Beverage Cost
• Control the Food and Beverage outlets in terms of wastage, pilferage and efficiency
• Check and verify all Package meals
• Check the cost of sales in all F&B outlets and ensure that the costs are within budget
• Daily Import of Micros Sales to Materials Control system
• Tally all end of shift reports generated from all POS tills
• Responsible for linking the articles and Recipes in Material Control
• Responsible for monthly F&B Report and distribute to management
• Prepare the daily and monthly cost report department in relation to cost of sales
• Spot-check on the receiving department to ensure that the scales are correct and goods are checked for quality
• Responsible to maintain the Menu Pricing, Consumption and POS systems

• Work in conjunction with all department heads to ensure maximum profitability
• Assess all incoming products, resources, and services to ensure the best price
• Maintain vendor and service provider relationship
• Analyze invoices to ensure correct products/services were received at the expected cost
• Collaborate with department heads to strategist ways to minimize waste
• Demonstrate a comprehensive understanding of the inter dependency of cost drivers
• Roll out clear cost-saving programs with timelines and assessment goals
• Ensure adequate record keeping and manage all documentation to confirm proper stock levels and maintain inventory control
• Responsible for proper receiving, storing and issuing of all food and beverage products in the food, beverage and general storerooms, and post the invoices accordingly.

• Prepare daily flash cost for Food and Beverage
• Month end Inventories for more than ten Outlets and stores
• Recipe costing of new menu or suggests sale price
• Approve steward sale issues and operating item issues
• Spot inventories in outlets & monthly inventories
• Perform yield test of meat fish and juices
• Market survey especially fast moving items like meet fish fruits
• Reliving to the Receiving Clerk and Cost Controller
• To do the Quotation spot checks on purchasing department.

• Be responsible for the house fund and its safe keeping in line with the cash handling policy of the Hotel
• Ensure the accurate settlement of Food & Beverage checks within the Outlet, tender change and apply accurate discounts wherever necessary
• Prepare the cashier summary at the close of shift as per the established guidelines of the Hotel
• Tally the cash, card and other settlements and drop the cash in the cash drop safe as per the cash policy
• Deposit all checks and reports to the finance department within the time frame assigned.

• Maintain the branch stock by using pinnacle software, and excel sheet
• Staff attendance record and prepare the salaries
• Daily reports, cash collection expenses, purchasing sheet.
